OCCUPATIONAL ASSOCIATE DEGREE IN RESTAURANT OPERATIONS

This is a two-year Occupational Associate Degree with a total of 82 credits that provides students with the technical skills, knowledge and abilities that will produce employable graduates who are ready to function effectively in the workforce.

The Moneague College has molded me into a more focused, goal oriented and self disciplined individual. It has expanded the way I receive, interpret and apply knowledge received or earned. If I should go back and do it all over again, I would still choose The Moneague College.

Programme Overview

The Restaurant Operations programme will expose students to the technical, operational processes and managerial competencies required in areas such as entrepreneurship and business development, banquet and buffet operations, restaurant math, facilities design, wines and liquors and restaurant operations laws.

The programme seeks to produce rounder graduates who will exhibit the abilities and competencies to function as junior supervisors with the capacity to grow and develop in the industry and continue on to
higher levels of education.

Upon completion of this programme graduates should be able to:

  1. Communicate effectively in the workplace
  2. Communicate conversationally in another language
  3. Plan and cost Menus
  4. Design a restaurant Facility
  5. Market Restaurant Operations
  6. Supervise Restaurant Operations
  7. Effectively prepare reports
  8. Manage Restaurant Accounting
  9. Practice restaurant laws
  10. Apply & practice the principles of inventory and cost control
  11.  Design and provide Banquet of Buffet Service

Course Duration

Full-time study for two (2) years across four (4) semesters and a summer internship/externship component.
